Black Walnut Cookie Strips

1 cup brown sugar
½ cup sifted flour
¼ teaspoon salt
2 eggs, well beaten
½ teaspoon vanilla
1 cup chopped walnuts

Preheat oven to 350 degrees, mix sugar, flour and salt. Add to eggs and mix well. Stir in vanilla and black walnut kernels. Spread in greased shallow baking pan (8 x 8 x 1.5) and bake for 20 to 25 minutes. Cut into strips and remove from pan while warm. Makes 24 cookie strips.


Sweet Potato Squash Soup

1 cup milk
4 medium sweet potatoes
2 winter squash (butternut or acorn)
1 can chicken broth
Grated fresh ginger, pepper to taste

Cook potatoes and squash until tender. Scoop out pulp and either mash or puree with a little broth. Add remaining chicken broth, ginger and pepper and enough milk to suit you. Heat but don't boil. Garnish soup with thin sliced lemon and parsley or cilantro.
